This pumpkin bread is dangerously good! I found this recipe on Pinterest and wanted to share it with you all!
Ingredients
Bread:
3/4 cup canola oil
2 eggs
1 Tbsp vanilla
1 cup pumpkin puree
1 cup flour
1 cup sugar
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
Streusel topping:
1/2 cup flour
1/2 cup packed brown sugar
1/2 tsp cinnamon
4 Tbsp cold butter, cut into small cubes
Instructions
Preheat oven to 350 degrees
Grease Loaf pan (I used a 9x5 loaf pan). In a large bowl, mix oil, eggs, vanilla and pumpkin.
Add 1 cup of flour, sugar, baking soda, salt and 1/2 tsp of cinnamon and mix until just combined.
Pour batter into loaf pan.
For the streusel topping:
In a separate small bowl, combine remaining 1/2 cup flour, 1/2 tsp cinnamon, brown sugar and butter and mix with pastry cutter until coarse crumbs form.
Sprinkle topping evenly over batter.
Bake 50-60 minutes or until toothpick inserted into center of bread comes out clean.
