Summer Pasta Salad

Summer Pasta Salad (gluten free)
Serving size : 2 large salads 

Ingredients:
  • 3oz baby spinach 
  • 1/2 box of gluten free pasta
  • 1/3 cup sun dried tomatoes
  • 4 tsps white balsamic vinegar (baker and olive is my favorite!)
  • 3 tbsp extra virgin olive oil
  • Pepper to taste
  • Grilled Chicken
  • Parmigian Cheese

Directions:

Season Chicken with salt and pepper and Grill. Boil pasta in water according to package directions. When done, drain and rinse under cold water.
In a large bowl, combine the pasta, spinach, sun dried tomatoes, olive oil, balsamic vinegar and pepper. Toss well then just before serving top with Parmigian and Grilled Chicken.
