Kale, Carrot and Lentil Soup
- Ingredients :
- 1 tablespoon olive oil
- 2 large carrots, chopped
- 1 medium onion, chopped
- 3 cloves of garlic, minced
- 1 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 1 cup green lentils
- 8 cups low sodium vegetable broth
- 2 sprigs fresh thyme
- 2 bay leaves
- 5 cups kale, chopped with stems removed
- salt and pepper to taste
- Instructions
- In a large pot over medium heat, add in the olive oil than Add in the chopped onion, and carrot. Cook until softened and slightly brown. Add in the garlic, paprika, cayenne pepper, and lentils. Mix and cook about 1 minute.
- Add in the vegetable broth, thyme, bay leaves, salt, and pepper. Bring to a boil, cover, and simmer for about 15 minutes. Stirring once or twice.
- Add in the copped kale, cover and cook for 15 additional minutes. Add more salt and pepper if needed (since i used low sodium broth i needed a bit more salt ).

Don't you just love soup in cold weather ! it's the best, wish i had some cold weather and a cozy fireplace to eat my soup by !
